Chef Lee's Tips for Planning a Great Event


Spending a little more time choosing the right caterer and planning your event will help to make it a great success.  Chef Lee has a few tips to help with the planning process.

 

QUESTIONS YOU SHOULD ASK YOUR CATERER

1) Are you a licensed caterer?

2) Do you carry insurance?

3) Are you a full time caterer?

4) How many years have you been a Caterer?

5) Can I see your kitchen?

6) Do you provide tastings? How many people can I bring.

7) Is there a limit to how many consultations the caterer will provide? Do they charge and how much?

8) Does the caterer do multiple buffet lines and is it self service or will the staff help serve? Will there be a floor captain to escort the guests to the buffet?


9) Will the caterer pour the champagne and cut the cake? Is there a charge for this service?

10) What do you do with the food that is left over?

11) Other information to ask your caterer.

1) Are you a licensed caterer?

It is illegal in this state to cater without a valid license from the local health department. You will be putting your guests and yourself at risk of not only getting ill if the food is not properly prepared and held at the right temperature, but also putting yourself at risk of a lawsuit. Insurance companies will not cover unlicensed caterers.

2) Do you carry insurance?

With a professional caterer you should not have to worry. But if something unforseen happens it is comforting to know that your caterer is covered.

3) Are you a full time caterer?

Generally speaking, full time caterers are specialists with you getting their full attention and expertise. Hotels, restaurants, and part time caterers have other priorities and catering is just a side line.

4) How many years have you been a caterer?

The longer the person has been catering the more experience. Disasters can happen with any event. The more experience the better able the caterer will be to handle those crises. Chef Lee has been catering since 1985.

5) Can I see your kitchen?

You want to see for your self how clean the kitchen is kept. If the caterer is unwillling for any reason to allow you to take a peek there may be a cleanliness issue or they may not be licensed.

6) Do you provide tastings? How many people can I bring.

Some caterers will provide a tasting up front. Of these some may not charge while others will charge, but will credit your account if you book with them. There are also those who will provide a tasting after you book to select your menu only. My feeling is that the proof is in the pudding. We are not afraid to let you taste our food up front.

7) Is there a limit to how many consultations the caterer will provide? Do they charge and how much?

We at Ambrosia offer unlimited consultations at no additional charge once your event is booked with us.

8) Does the caterer do multiple buffet lines and is it self service or will the staff help serve? Will there be a floor captain to escort the guests to the buffet?

The bigger the event the more lines are required to serve the guests in a timely manner. A service buffet where the waitstaff serves the food to the guests is a nice added touch. The floor captain can escort your guests to the buffet allowing them to remain seated longer instead of standing in a long line. We at Ambrosia WILL provide mupltiple buffet lines. We like to keep the service to 35 minutes with another 25 minutes for busing. Our staff WILL serve the guests and our floor captain WILL escort your guests

9) Will the caterer pour the champagne and cut the cake? Is there a charge for this service?

Some caterers charge for this service, we do not.

10) What do you do with the food that is left over?

We will package up whatever is left on the buffet table for you to take home.

11) Other information that should be asked of your caterer is:

- Who supplies the linen and is there a charge?
- Who supplies the centerpieces for the guest tables?
- Will there be salt & pepper on each table?
- Is there sitdown service for the bridal table?
- Will you use china or disposables? What is the charge?
- Is there a delivery charge? If so how much?
- Is there a setup charge? If so how much?
